Langka (Young Jackfruit) Salad

Of course, I'd choose fresh young jackfruit  (like these that grow in front of my sister Ruth's house in Manila) to make spicy  Langka Salad. But fresh jackfuit is hard to come by, if not at all so I'll use the canned ones below. This  particular tree had more (big ones) hanging at the bottom part of its trunk. The housekeeper covered them with burlap sacks (of which I am not sure why). I do know that when they begin to ripen, a sweet, sweet smell emanates from these fruits.

The cans  had big chunks as shown in the  picture so I sliced them for easier bites.

Rinse and squeeze out the water as much as you can.

Now start slicing green and red bell peppers and mix together with  minced onions and ginger. The amount depends on your taste. You'll never go wrong.


Mix all ingredients together with a tablespoon or two of Gohchujang.   

Pepper paste...but  fresh, flaked or powdered chili will also do.

Now let this sit for an hour or two....overnight, maybe  before starting to eat. Actually the longer you let the  ingredients  marry, the tastier this salad gets.

So refreshing!

A Singin' and A Dancin' ----That's What Sisters Do!

I browse the pictures I took of my sisters and I swear I can hear the music that  got them boogying this way and that. Two other sisters were singing some danceable beats and there was no stopping the other three from doing their oldies but goodies strokes....


There's Agnes and Ellen swooshing their  behinds from left to right and right to left....

WHOOSH! WHOOSH! WHOOSH!


Now, is this L.A. Walk from the 80's or Pandango Sa Ilaw (Phil. folk dance)?

I have a feeling this might be some kind of  ChaCha

Agnes can't take it anymore...she goes, " You can dance with your shadow now. I'm done!"

Agnes takes a seat to rest and Ruth joins in with some hand strokes, mind you!

Jenny sings her heart out while....


...while Beth belts it out with Jenny EVEN without a microphone

At this point the  energy level  is at its  highest.....the singing...the dancing...

There is nothing like hanging out with sisters!

Japanese Knotweed Honey


I did not know there is such a thing

Pan de Coco

Back home in Manila, some Saturday afternoons, 3:00 o clock was  merienda (snack) time. The house helper then walks off to Celmarian (the nearest bakery from the house) [with an umbrella covering her head to ward off the heat] to get fresh-from-the-oven  Pan de Coco. There are other selections just as delicious and we eat them with  a  drink of iced coke. It was always satisfying.

and when reheated  in the toaster oven, they are just as delicious as if they  were just baked

The Fate of the Easter Eggs



Early morning after Easter Sunday, while the  owner of the  colored dozen  slept, his Momma mulled over  the fate  of the eggs.  Upon deciding what to do she asked him, rather warned him (as he sleepily acquiesced) that the  eggs will soon morph into two dishes he and his Poppa love to eat.


There  was pandemonium among the eggs...they were both nervous and excited...

wanting to know what will become of them....

shelled and halved, the blue one particularly was not sure  he was liking what was going on...

ahhh....deviled egg with a sprinkling of paprika and

and ever the favorite....egg salad

then there was silence...

then jubilation!!! They're happy to  make  us happy!

We let these good sports grace our table for a few more days to remember what fun we had with them!
